Flavorful fusion: Savour East African grilled meat and braised collard greens

This succulent grilled meat dish is a popular East African delicacy, perfect for any occasion.

Ingredients
• Two pounds meat (preferably goat or beef)
• One-half cup water
• Four cloves garlic, minced
• One tablespoon grated ginger
• One-half tablespoon paprika
• One teaspoon curry powder
• One teaspoon minced rosemary leaves
• One teaspoon bouillon powder or one tablespoon soy sauce
• One-quarter teaspoon cayenne pepper (optional)
• One-quarter cup vegetable oil
• One-quarter cup freshly squeezed lemon juice
• Salt and pepper to taste
Method
• Combine all ingredients except meat to create a marinade.
• Coat meat with marinade and refrigerate for at least 2 hours, ideally overnight.
• Preheat grill to medium-high heat.
• Grill meat for 20-25 minutes, basting with remaining marinade.
• Check for doneness and adjust cooking time as needed.
• Rest meat for a few minutes before serving.
• Serve with ugali, sukuma wiki, chapati, or kachumbari.

Braised collard greens

Ingredients
• One bunch kale or collard greens
• One to two cups minced beef or chicken (optional)
• Three medium tomatoes, diced
• One to two teaspoons minced garlic
• One large white onion
• Two tablespoons cooking oil
• One tablespoon smoked paprika
• One-half teaspoon each: ground coriander, curry powder (or turmeric), cayenne pepper
• One tablespoon lemon juice
• One tablespoon bouillon powder
Method
• Sauté onions and garlic in oil for 2-3 minutes.
• Add tomatoes, curry, coriander, and paprika. Cook for 2 minutes.
• Add minced meat and bouillon. Simmer for 5 minutes.
• Toss in chopped greens, cayenne, and lemon juice. Cook for 5-10 minutes.
• Adjust seasonings and serve with ugali.
