Nigerian Buns

By Femi Paseda

Nigerian buns are a big favourite of ours, particularly because it is crunchy on the outside and then soft and sweet on the inside. This is a big snack for us here in Nigeria, but the thing is that only a few people know how to get it right. If you want the perfect buns which do not leave any after-taste in your mouth, let’s jump right into the recipe.

Prep Time: 10 mins.

Cook Time: 30 mins.

Total Time: 40 mins.

Servings: 5 people

Ingredients

  • 150 ml water
  • 1 egg
  • 1 tsp Vanilla extract optional
  • 1 tbsp baking powder
  • 100g sugar substitute with honey
  • 1 tsp salt
  • Vegetable oil for frying
  • 400g all-purpose flour
  • 3 tbsp of butter

Instructions

  1. In a mixing dish, combine all of the dry ingredients along with the butter to make a crumble.
  2. Mix in the egg and water until a smooth, stretchable mixture forms, then gradually add water to the flour until the required consistency is achieved. Make sure the batter is not overworked.
  3. Heat vegetable oil in a shallow pan over medium heat until it is hot.
  4. To see if the oil is ready, drop a small amount of batter into it. It’s done when the batter floats on top.
  5. Drop the batter in small batches into the hot oil, being careful not to overcrowd it.
  6. Reduce the heat to low and continue to fry the buns until golden brown and cooked through.
  7. Rep until you’ve used up all of the batter mixtures.
