Coconut chicken curry and baked jerk chicken drumsticks for a flavour-packed feast!

Coconut chicken curry

This Asian-inspired curry chicken dish is also popular in the Caribbean. It pairs well with white rice, especially Jasmine or Basmati.
Prep time: 30 minutes
Cook time: 40 minutes
Marinating time: 2 hours
Servings: 4 people

Ingredients
• 500g boneless chicken
• One can (400g) coconut milk
• Three tablespoons cooking oil
• One handful chopped cilantro (optional)
• Three stalks spring onions
• Three red and green chili peppers
• One chopped onion
• Four tablespoons curry powder
• One tablespoon each: paprika, crushed red chili peppers, chicken seasoning, ground ginger
• Half tablespoon each: cumin powder, garlic powder
• Three garlic cloves
• One tablespoon minced ginger
• One chicken bouillon cube
• Salt to taste

Method
• Marinate chicken with spices for at least 2 hours.
• Cook marinated chicken with onions and seasoning for 3-5 minutes.
• Add water, cook until chicken is three-quarters done. Set aside.
• In the same pot, fry garlic and remaining curry powder.
• Add onions, peppers, and spring onions.
• Return chicken to pot, fry for 3-4 minutes.
• Add chicken stock, then coconut milk.
• Simmer for 5 minutes, add cilantro and adjust seasoning.
• Serve with cooked rice.

Baked jerk chicken drumsticks

Baked jerk chicken drumsticks
This spicy and flavorful Caribbean chicken dish is easy to prepare and full of bold flavors.
Prep time: 15 minutes
Cook time: 40 minutes
Marinating time: 3 hours (or overnight)
Servings: 4-5 people

Ingredients
• 10-12 chicken drumsticks
• One tablespoon each: allspice, dried thyme, brown sugar, ginger powder, smoked paprika, cayenne pepper
• Two tablespoons each: onion powder, garlic powder
• Two chicken bouillon cubes
• Three-quarter teaspoon each: white pepper, cinnamon powder
• One teaspoon dried parsley
• Three-quarter teaspoon nutmeg powder
• Half teaspoon salt

Method
• Combine all dry ingredients to make jerk seasoning.
• Wash chicken and season with some of the jerk seasoning. Marinate for at least 3 hours, preferably overnight.
• Preheat oven to 180°C (350°F).
• Rub more seasoning on the chicken before placing in the oven.
• Roast for 40 minutes, turning halfway through.
