Plantain bread

This delicious bread is a great way to use overripe plantains. It’s perfect for breakfast, especially paired with hot chocolate.

Servings: 8 people

Ingredients
• One cup plain flour
• Two overripe plantains
• One stick butter (125g)
• Three eggs, room temperature
• One-eighth cup brown sugar
• One teaspoon baking soda
• One teaspoon yeast
• Half teaspoon salt
• One tin evaporated milk (160 ml)
• One teaspoon cinnamon
• One-quarter cup roasted groundnuts (peanuts)

Method
• Warm evaporated milk slightly and stir in yeast. Set aside.
• Peel and mash plantains until smooth.
• Whisk eggs in a separate bowl.
• Melt butter.
• Mix flour, cinnamon, brown sugar, salt, and baking soda in a bowl.
• Add milk mixture, melted butter, and mashed plantains. Mix well.
• Crush half the peanuts and add to the mixture.
• Pour into a bread pan and sprinkle remaining peanuts on top.
• Bake at 180°C (350°F) for 40 minutes or until a skewer comes out clean.
• Cool on a rack before slicing.

Groundnut (a.ka. peanut) is a nutty alternative to cow’s milk, perfect for vegetarians or those who are lactose intolerant.
Prep time: 3 hours (soaking time)
Cook time: 10 minutes

Servings: 2-3 people

Ingredients
• 300g raw peanuts (groundnuts)
• Cool water
• Optional: Vanilla extract, sugar to taste

Method
• Rinse and soak peanuts in cool water for 3 hours.
• Blend soaked peanuts with minimal water until smooth.
• Strain through a cheesecloth or fine sieve.
• Boil the milk, stirring to prevent lumps.
• Cool completely, remove any skin formed on top.
• Serve chilled or at room temperature.

Note: For food safety, it’s recommended to boil the milk before drinking. Store in the refrigerator and consume within 48 hours.
