Ingredients
• Two cups beans (oloyin preferably)
• Two cups fresh corn
• One-quarter cup palm oil
• One diced onion
• Two diced tomatoes
• Two tablespoons ground crayfish
• One tablespoon ground pepper
• Salt to taste
Method
• Rinse the beans and place in a pot with enough water to cover. Boil until almost tender.
• Add the corn kernels to the pot and continue cooking until both beans and corn are soft.
• In a separate pan, heat the palm oil and sauté the onions and tomatoes.
• Add the sautéed mixture, crayfish, and pepper to the beans and corn. Stir well.
• Simmer for 10 minutes, adding water if necessary to achieve desired consistency.
• Season with salt to taste and serve hot.

Ingredients
• Four tablespoons unsalted butter
• One-third cup chicken stock or broth
• Two pounds extra large or jumbo shrimp, peeled and deveined (tails on or off)
• Two to three tablespoons fresh parsley, chopped
• One tablespoon minced garlic
• One teaspoon salt-free Creole seasoning (or Italian seasoning)
• Two tablespoons freshly squeezed lemon juice
• Salt to taste
• Lemon wedges for garnish
Topping
• One-third cup Panko breadcrumbs
• Two tablespoons grated parmesan cheese
• One to two tablespoons melted butter
Method
• Preheat the oven to 350℉/177℃.
• In a microwave-safe bowl, combine butter, chicken stock, garlic, and Creole seasoning. Microwave for about 30 seconds or until butter melts. Add lemon juice and set aside. Alternatively, use a small skillet over medium-high heat for about 30 seconds.
• In a large bowl, lightly season the shrimp with salt and pepper. Pour the butter mixture over the shrimp and mix thoroughly.
• Arrange the seasoned shrimp in a single layer in a shallow 9″x13″ baking dish or 12-inch cast iron skillet.
• In a separate bowl, mix the breadcrumbs, parmesan cheese, and melted butter. Spread this mixture evenly over the shrimp.
• Bake in the preheated oven for 12-15 minutes, or until the shrimp is cooked through.
• Switch the oven to broil and cook for an additional 1-2 minutes or until the breadcrumbs turn slightly brown.
• Remove from the oven, garnish with lemon wedges and a sprinkle of chopped parsley. Serve immediately and enjoy your crispy baked shrimp!
