• Two tablespoons of butter
• One pound of potatoes, scrubbed and thinly sliced
• One tablespoon of olive oil
• One large onion, thinly sliced
• One-fourth teaspoon of salt
• One tablespoon of minced garlic (optional)
• One-fourth teaspoon of black pepper
• One-half teaspoon of Creole seasoning (optional)
• Parsley, for garnish

Method
• In a heavy skillet or cast-iron pan, warm up the butter and olive oil over medium-high heat.
• Add your thinly sliced potatoes to the skillet, spreading them out for even cooking.
• Season the potatoes with salt, black pepper, and if you like a bit of spice, Creole seasoning. Allow them to cook without moving them for about two to three minutes, or until they start to get a golden crust. Then, flip them over to crisp up the other side.
• Mix in the sliced onions and garlic, if using. Stir them occasionally, letting everything cook together. You want the onions to get nice and caramelized, and the potatoes to be golden and crispy. This will take around twenty minutes.
• Once everything is beautifully browned and cooked through, taste it and adjust the seasoning if necessary.
• Finish by sprinkling parsley over the top for a fresh touch.
• Serve your crispy fried potatoes and onions hot.

Ingredients
For the dressing:
• One-half cup of sour cream
• One-half cup of mayonnaise
• One tablespoon of grated onion
• One to two tablespoons of honey or sugar
• One to two tablespoons of lemon juice

For the salad
• Four to five cups of shredded carrots, well drained
• One cup of pineapple, crushed or chopped
• One-half to one cup of raisins
• One-half cup of hot water
• Salt and pepper, to taste

Method
• Start by preparing the dressing. In a medium bowl, combine the sour cream (or mayonnaise), mayonnaise, grated onion, honey (or sugar, if preferred), and lemon juice. If not using immediately, store the dressing in the refrigerator.
• Take your carrots and grate them into a large bowl, making sure to drain any excess liquid.
• If using canned pineapple, drain it well before chopping into small pieces. Fresh pineapple should also be chopped. Add the pineapple to the bowl with the grated carrots.
• Place raisins in a bowl and cover them with hot water. Let them soak for about ten to fifteen minutes until they’ve plumped up. After soaking, drain the raisins well and add them to the carrot and pineapple mixture.
• Add the chilled dressing to the carrot mixture and stir everything until the salad is well coated with the dressing.
• Taste the salad and season it with salt and pepper as needed.
