Ingredients
• One to two garlic cloves
• One teaspoon salt

• One-quarter onion, cut into pieces
• One teaspoon Cayenne or chili pepper
• Half to one tablespoon chopped ginger
• One teaspoon lemon juice
• Half a teaspoon nutmeg
• Four to six ripe plantains with little black spots

Method
1. Trim both ends of the plantains and make a shallow slit along the long seam. Peel the skin off.
2. Slice the plantains diagonally and set aside.
3. In a blender or food processor, combine the onion, ginger, and garlic with just enough water to blend smoothly. Then, add the cayenne pepper, lemon juice, nutmeg, salt, and bouillon. Mix well and set aside.
4. In a large bowl, toss the plantain slices with the spice mixture.
5. Allow the plantains to marinate for 10 to 20 minutes to soak up the flavors.
6. Heat oil in a large skillet or cast iron pan over medium-high heat until hot but not smoking.
7. Fry the plantain slices in batches to avoid crowding, turning once, until golden brown, about 5 minutes per batch.
8. Remove the fried plantains with a slotted spoon and drain on paper towels.
9. Serve warm and enjoy!
