Nigerian Red Stew

The Nigerian red stew is one of our most commonly prepared recipes. We love it because, essentially, we can use it for many meals like rice, yam, and many other meals. Ingredients

  • 5kg of Plum tomatoes.
  • 2 large Onions
  • ½ cup vegetable oil (cholesterol-free)
  • 6 Scotch bonnet peppers (atarodo)
  • 3 cloves Garlic
  • 1 tsp Curry powder
  • 2 tsp dried thyme
  • 2 large Bell peppers
  • 1 ¾ cups Lamb stock (You can use the stock from preparing the meat)
  • 3 stock cubes
  • Salt (to taste)
  • ½ kg braised lamb meat chunks
  • Ginger small thumb size

Directions

  1. Boil your chunks of meat using salt to taste and one stock cube till it’s soft enough, then set aside.
  2. In another large pot, boil your tomato mix till it forms like a paste – the colour should be a little darker before you take it off from the heat, scoop out and set aside.
  3. Slice your onions into small bits and then in the same pot where you scooped off the tomato mix, pour your vegetable oil and fry the onions till it is softened and caramelized.
  4. Then add your tomato mix and cook under medium heat for about 5 minutes.
  5. Once the five minutes are up, add your stock, the remaining seasoning cubes, curry, and thyme. Stir them together and allow them to cook for 10 minutes under low heat.
  6. Once it has boiled for 10 minutes, you can add your beef and add salt to taste. If you would like, you can add your boiled fish as well and cook for 5 minutes.
  7. Once it is properly steamed, you have your well-cooked Nigerian Red Stew – enjoy.
