Ingredients
• Three ripe bananas
• One teaspoon vanilla extract
• One-half teaspoon cinnamon
• One-quarter teaspoon nutmeg
• Three tablespoons brown sugar
• A pinch of salt
• One cup all-purpose flour
• Oil for frying
Method
• In a bowl, use a fork to mash the bananas until smooth.
• To the mashed bananas, add the brown sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Gradually sift in the flour, mixing with a spoon until everything is well incorporated.
• Heat oil in a 10-inch skillet over medium-high heat. When the oil is hot, carefully spoon the banana fritter batter into the skillet.
• Fry the fritters until the underside is golden brown and bubbles start to form on the surface. Then, flip each fritter over and fry until the second side is also nicely browned.
• Transfer the cooked fritters to paper towels to drain any excess oil.

• Two cups all-purpose flour
• Three-quarters cup milk
• Oil for frying, about one and a half cups
• Two teaspoons baking powder
• One teaspoon salt
Method
• In a large mixing bowl, combine the flour, baking powder, and salt. Stir these dry ingredients together before pouring in the milk. Mix until everything is just combined, then bring the dough together into a ball and give it a light knead until smooth.
• Break the dough into about ten pieces and roll each piece into a ball. Arrange them on a tray or plate while you heat the oil.
• Fill a 10-inch skillet with the oil and warm it over medium heat until it reaches about 350 degrees Fahrenheit, ready for frying.
• Gently place the dumplings in the hot oil. Fry until they’re golden brown on one side, then flip them over to brown the other side, letting them cook for about two to three minutes on each side.
• Once the dumplings are evenly browned and puffed, remove them from the oil and let them drain on paper towels or a wire rack to remove any excess oil.
