Ingredients
- 1 big green pepper
- 3 small red bell pepper
- 3 small noodles
- 2 eggs
- Vegetable oil
- 1 Tomato – optional
- 2 carrots
- 1 medium onion
- Salt – for frying
Instructions
- Chop your big green pepper, red bell pepper, tomatoes, onion and carrot, separating them in different small bowls.
- Scatter your noodles and boil for 5 minutes but be sure not to allow them to get too soft.
- Sieve the noodles and set them aside.
- Take a non-stick pan, and then add your chopped ingredients and simmer for about a minute – add the carrot last but reserve some of these ingredients for the egg.
- Add your noodles and continue stirring till everything is well incorporated – ensure you use a wooden spatula.
- Add your noodles spice – about two and a half of it rather than everything.
- Continue stirring under low heat till the entire thing looks together, then set aside.
- Clean the pan, then add vegetable oil under low heat.
- Whisk your eggs with a pinch of salt and the extra carrots, pepper, and tomatoes, allow to fry and serve on top of your noodles.
