Peppered fish is an exciting recipe, especially because it can be combined with a lot of tasty foods – my favourite is garri. Ingredients
- Juice squeezed out of 2 lemons
- 2 large chopped red bell peppers
- 1 small tomato
- 2 large chopped green bell peppers
- 1 large chopped onion
- 1400 g of croaker fish
- 4 Tablespoons of Oil
- 2 cups of oil for deep frying
- ½ tsp Salt
- 1 tsp bouillon powder
- 4 habanero peppers
Instructions
For Preparing the Fish:
- Combine the lemon juice and the salt.
- Combine the fish and sauce in a clean container, then place in a ziplock bag and store in the refrigerator.
- Allow the fish to marinate for an hour.
- Heat the oil and deep fry the fish for at least 2 minutes on each side after the marinade.
- To absorb excess oil, place on a tray rimmed with paper towels.
- Set aside and work on the sauce.
For Preparing the Sauce:
- Set aside after blending the tomato and habanero pepper with as little water.
- Heat four tbsp oil and fry onions while the fish is marinating.
- Combine the tomato and peppers in a mixing bowl.
- Fry for a minute or so.
- After that, add the green and red bell peppers as well as the bouillon powder.
- On low heat, stir fry for extra three minutes. Season to taste and make any necessary adjustments.
- After that, turn off the heat.
The Final Combination:
- After frying the fish, place it on a plate and pour the sauce over it, gently mixing it in to keep the fish from splitting to pieces.
- Serve and enjoy with garri and chips.
