Warm up from the inside out with this hearty vegetable beef soup. Packed with tender chunks of beef and an abundance of fresh veggies, it’s a wholesome blend of flavor and nourishment in every spoonful. Perfect for chilly nights or when you crave comfort in a bowl. Enjoy!

Ingredients
• 1½ cup of frozen corn
• One cup of frozen peas
• 1/3 cup of chopped fresh parsley
• Black pepper and salt
• One teaspoon of dried oregano
• Half teaspoon of dried thyme
• 1½ cup of chopped green beans
• Three medium carrots peeled and chopped
• One large chopped yellow onion
• 2½ tablespoon of olive oil
• 1½ lb. of beef
• One cup of chopped celery
• 1½ tablespoon of minced garlic
• Five large diced tomatoes
• 1 lb. of red potatoes cut into small cubes
• Eight cups of chicken broth
• 1½ teaspoon of dried basil

Method
1. In a large pot, heat 1 Tbsp olive oil on medium-high.
2. Pat beef dry, season with salt and pepper. Brown half the beef in the pot for about 4 minutes, turning midway.
3. Move beef to a plate. Add 1/2 Tbsp oil and brown the rest of the beef.
4. Add 1 Tbsp oil to the pot. Sauté onions, carrots, and celery for 3 minutes, then garlic for another minute.
5. Mix in broth, tomatoes, browned beef, herbs, salt, and pepper. Bring to a boil, reduce heat, cover, and let it simmer for 30 minutes, stirring occasionally.
6. Add potatoes (and green beans if you prefer them soft) and simmer covered for another 20 minutes.
7. Add green beans and cook until beef and veggies are soft, about 15 minutes more.
8. Mix in corn and peas, cook until warm, about 5 minutes. Add parsley, stir, and serve hot.

Method
1. In a saucepan, combine 1 1/2 cups blueberries, water, sugar, and vanilla. Heat on medium-high until it lightly boils and blueberries begin to soften.
2. Mix in the dissolved cornstarch and boil. Reduce heat and simmer for 2-3 minutes until it’s your preferred thickness. Add water bit by bit if it becomes too thick.
3. Take off heat, add the rest of the blueberries, and stir. Serve either warm or chilled.
