A dish of Sukuma wiki from East Africa!

Have you ever heard of the Sukuma wiki? Relax, it’s an East African recipe popular in countries like Kenya and Tanzania, and it is quite tasty as well.

In Tanzania, Kenya, Uganda and other parts of East Africa, colewort are more commonly known by their Swahili name, sukuma, and are often referred to as collard greens. It is also commonly mistaken for kale.

However, with just a few ingredients and a little bit of your time, you can prepare this tasty delicacy which can be the perfect family dinner.

Total Time: 30 mins.
Servings: 4 People

Ingredients
● ½ kg of beef
● Two medium-sized tomatoes
● Seven cups of kale
● Salt to taste
● One beef bouillon cube
● Two tablespoons of oil
● One onion diced

Method
1. Start by heating the oil in the pan.
2. After about 5 minutes, add the onion dice and sauté until golden brown.
3. Season the meat with salt and a bouillon cube, then add it to the pot. Cook until tender, stirring frequently.
4. After about 3 minutes of cooking time, add the tomatoes and let them soften.
5. Cook until the greens are soft, stirring occasionally.
6. Serve with your favourite solid – Semo, fufu, Amala or wheat.
7. Enjoy!

Ingredients
● Five eggs
● 1/3 cup melted butter
● One teaspoon of vanilla extract
● 2/3 cups of milk
● ¾ cup water
● One teaspoon of nutmeg
● ½ cup oil
● Two medium ripe plantains (One cup puree)
● 1 ½ cups of flour
● ¼ cup sugar

Method
1. Start by slicing and peeling the plantains.
2. Puree in a blender until completely mixed.
3. When you’ve added everything else, give it a few pulses to make sure it’s all evenly distributed.
4. Get in one last pulse and, if necessary, scrape the walls of the blender.
5. Give the batter a rest in the fridge for at least 30 minutes, preferably longer.
6. To begin, heat a non-stick frying pan and brush the hot surface with vegetable oil.
7. Then, depending on the size of your pan, add roughly a half cup of batter.
8. Flip the pan to evenly distribute the batter. The pancake needs about a minute per side to reach a golden-brown colour.
9. Serve warm with coconut sauce or any other extra of your choosing.
10. Enjoy!
