Ingredients
• Two large eggs at room temperature
• Three tablespoons softened butter
• One-quarter cup sugar
• One-half tablespoon yeast
• One cup warm water or liquid milk
• One-quarter cup powdered milk (skip if using liquid milk)
• Four cups all-purpose flour plus two tablespoons for dusting
• One-half teaspoon salt
• One teaspoon vanilla extract
• Oil for deep frying
For the milky filling
• One cup powdered milk
• One-half cup condensed milk
• Two tablespoons evaporated milk or liquid milk
Method
• Whisk yeast, warm water (or liquid milk), and sugar. Let proof for 5-10 minutes until foamy.
• In a stand mixing bowl, combine flour, powdered milk (if using), eggs, salt, vanilla, and yeast mixture. Mix on low speed for two minutes until a dough ball forms.
• Add softened butter and mix for 5-7 minutes until slightly sticky.
• Lightly grease a bowl with oil, place dough inside, and rub oil on dough surface. Cover and let rise for 1 hour 30 minutes.
• Cut parchment paper into 12×12 squares, place on work surface, and sprinkle with flour.
• Punch down dough to release air bubbles. Divide into 10-12 portions and roll each into a ball.
• Place each ball on parchment paper, cover with cloth, and let proof for 45 minutes.
• Heat oil in a deep pot to 375℉. Fry 2-3 doughnuts at a time for 1 minute per side until golden brown.
• Remove and place on absorbent paper.
• For filling, combine powdered, evaporated, and condensed milk until smooth. Transfer to a piping bag.
• Poke a hole in each doughnut and fill with milk mixture.
• Serve immediately as filling may harden inside doughnuts.
