Asun – Aka Peppered Goat Meat

Asun is one of the most beloved Nigerian recipes that can leave you licking your fingers so seriously. You can never get tired of peppered goat meat, and there is nothing better than being able to prepare this delicacy by yourself at home and enjoying it with your family. Let’s take a look at the recipe.

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour 10 minutes

Servings: 4 people

Ingredients

One teaspoon of bouillon powder

¼ onion

salt to taste

One teaspoon of red pepper flakes 

One lb goat meat

For the sauce

One teaspoon of black pepper

One garlic clove

Two tablespoons olive oil

¼ big onion 

One chopped habanero pepper 

One teaspoon paprika

One cup of chopped yellow bell pepper 

One cup of chopped red bell pepper 

salt to taste

One teaspoon of bouillon powder

One cup of chopped green bell pepper 

Instructions

Turn the oven on to 320 degrees.

Rinse the goat meat and cut it into bite-sized chunks.

To cook the goat, prepare a large skillet on medium.

Stir in the onion and bouillon powder and let the mixture simmer for twenty minutes.

Arrange the meat out in a single layer on a sheet of tinfoil in a baking dish.

Roast for half an hour, stirring once midway through.

For the Sauce

Meanwhile, chop the red habanero pepper, green bell pepper, yellow bell pepper, and onion.

Stir the onion and garlic around in the hot oil for approximately a minute.

Cook for another 5 mins after adding the diced bouillon powder, paprika peppers, and black pepper.

Roasted goat meat should be added here and properly mixed up. Let it cook at a low boil for about 5 mins.

Taste and season with salt, if needed.

Red pepper flakes can be used as a garnish.

Baked Ripe Plantain – Nigerian Boli

Baked plantains that are just ripe enough are a culinary masterpiece when paired with groundnut. This traditional Nigerian roadside snack, also called Boli, is traditionally prepared by roasting plantains over a charcoal hearth. The plantains are often roasted on a wire rack set atop the fire. I’ll teach you how to make it in the oven instead, and trust me; it’ll still taste delicious. You may eat these roasted, grilled, or baked ripe delicious yellow plantains for any meal of the day!

One tablespoon of olive oil – for brushing the plantains 

Instructions

Turn the oven temperature up to 400 degrees.

Plantains should be washed and dried off with a dry towel.

Remove the plantain’s peel and carefully cut it in half lengthwise.

Place a wire rack on top of foil on a baking sheet.

Toss the cut plantains with some salt and oil, then rub them with clean hands to evenly spread the seasonings.

Cook the plantains in a preheated oven on a rack.

Cook in the oven until done, with the edges turning brown and burnt. After 15 to 20 minutes in the oven, turn the dish over to ensure even browning on both sides. It could take anything from 35 to 45 minutes to prepare everything. Don’t close your eyes and hope it doesn’t burn.

After baking, remove from the oven and serve hot with groundnut.
