• Two medium potatoes, peeled and cut into thin fries
• Four eggs

  • Heat oil in a large skillet over medium-high heat. Add the potato fries and fry until golden brown and crispy. Remove from the oil and set aside on a paper towel-lined plate.

  • In the same skillet, add a little more oil if needed. Pour in the whisked eggs and scramble until just set.
