Moroccan maakouda potato cake and strawberry smoothie

Shifting away from the usual Nigerian recipes we are used to, we take a trip to Morocco where Maakouda, a popular street food is prepared. This makes a good side dish; one you can enjoy without the need to actually hit the streets of Morocco

Moroccan maakouda potato cake ingredients

Ingredients
• One beaten egg
• Vegetable oil for frying
• Two cups of mashed potatoes (500g)
• Two cloves of garlic (crushed)
• 70g of plain flour
• ½ teaspoon of ground cumin
• 1/8 teaspoon of salt and pepper
• ½ teaspoon of ground turmeric
• Two teaspoons of fresh chopped parsley

Method
1. In a medium bowl, combine the mashed potatoes, egg, minced garlic, chopped parsley, turmeric, cumin, salt, and pepper. Mix everything thoroughly until well combined.
2. Place the all-purpose flour in a small bowl. Take heaped tablespoonfuls of the potato mixture, shape them into balls, and then gently flatten them into patties. Dip each potato patty into the flour, ensuring it’s evenly coated. Set aside and repeat this process with the remaining mixture.
3. Heat about 2 inches of cooking oil in a deep pan until it reaches 350°F (180°C). Carefully use a slotted spoon to add a few potato cakes at a time into the hot oil. Fry them until they turn golden brown, which should take approximately 3-4 minutes. Once they’re done, use the slotted spoon to remove them from the oil and place them on a plate lined with kitchen paper to drain any excess oil. Continue this frying process until all the potato cakes are cooked.
4. Serve the potato cakes while they are still warm. They can be enjoyed as an appetizer or a side dish. Traditionally, they are served in French bread or baguette, along with lettuce, tomato, and spicy tomato sauce. Enjoy your delicious homemade potato cakes!

Strawberry smoothie
If you are a lover of smoothies, then you need to try this strawberry smoothie.
Prep Time: 5 mins.
Cook Time: 0 mins.
Total Time: 5 mins.
Servings: 2 mini smoothies

Ingredients
• One cup of almond or oat milk
• ½ cup of Greek yoghurt
• One big banana
• 2 cups of strawberries – frozen
• 1½ tablespoon of honey
• ½ cup of ice

Method
1. Put all the ingredients in a blender, including the broken banana pieces.
2. Blend until the mixture becomes creamy and frothy. Occasionally, pause to scrape down the sides if needed.
3. If you like, you can add a frozen strawberry and a sprig of mint as garnish.
4. Serve the blended drink right away or store it in a covered container in the refrigerator for up to 2 days.
