• Two tablespoons of rice vinegar
• Eight scallions (ensure the white and green parts are separated with each one cut into small pieces).
• ½ teaspoon of sesame oil
• ¼ cup of water
• Two teaspoons of cornstarch
• One tablespoon of soy sauce
• Two teaspoons of cornstarch
• One teaspoon of soy sauce
• 1½ pound of chicken (boneless and skinless)
• ½ teaspoon of salt
• ¼ teaspoon of ground black pepper
• Two tablespoons of vegetable oil
• Six minced garlic cloves (medium)

1. Heat your oven to 350°F (175°C).
2. Spread the cashews on a baking tray and bake until they become aromatic, roughly 5 minutes. Take them out to cool; they’ll get crunchier as they cool down.
3. For the sauce, mix water, cornstarch, hoisin sauce, and soy sauce in a small bowl and put it aside.
4. Season the chicken with salt and pepper in a large bowl, tossing to cover all pieces.
5. In a skillet over high heat, warm up half the vegetable oil until it’s hot. Fry half the chicken until it’s slightly browned, about 3 minutes, then move it to a plate.
6. Add the rest of the oil to the skillet along with the remaining chicken, garlic, and the white parts of the scallions. Fry until the chicken is just browned, about 3 minutes, then reintroduce the first batch of chicken to the skillet. Reduce the heat to medium, add the rice vinegar, and cook until it has evaporated, close to 30 seconds.
7. Pour the sauce mix into the skillet with the chicken, stirring until the chicken is fully cooked and the sauce thickens, about 1 minute. Take the skillet off the heat and stir in the green parts of the scallions, the toasted cashews, and sesame oil. Serve right away.
