Ingredients
• Two cups of rice
• One cup of pepper mix (tomatoes, onions, red bell pepper)
• Smoked fish
• ½ cup of palm oil
• Two tablespoons of locust beans
• Scent leaves
• One tablespoon of beef bouillon
• One teaspoon of salt
• Three tablespoons of ground crayfish

Method

Preparation:
• Rinse rice and optionally, parboil it. Set aside.
• Wash dried fish, and leave the smoked fish as is.

Making the sauce:
• In a pan, warm palm oil (without bleaching) and sauté onions until they’re clear.
• Add your pepper mixture, crayfish, seasoning, and salt, cooking until the oil surfaces.

Cooking the rice:
• Integrate the rice with the sauce, adding enough water to just cover it, and simmer. Monitor closely, adding water as needed and inserting dried fish after about 7 minutes.
• When the rice is nearly cooked, adjust the seasoning and embed the smoked fish with gentle stirring.

Finishing touch:
• Cook for an additional 5 minutes, then introduce basil and your preferred greens until the rice reaches a non-soggy, soft consistency.
• Let it cool slightly off the heat and serve promptly.
