Unripe Plantain Porridge

If you’re looking for a healthy dose of plantain and the rich taste of porridge wrapped together in one place, then you need the unripe plantain porridge. If you have been used to consuming yam porridge, popularly known as Asaro, this is a sweet, easy to prepare, and fascinating alternative you can try out today. Let’s head into the kitchen and prepare something nice and interesting.

Servings: 3 People

Ingredients

  • Salt to taste
  • 4 unripe plantain you can substitute with ripe but firm plantain
  • ⅓ cup palm oil
  • 8 pieces of fresh shrimp
  • 2 cups of Ugwu
  • 1 handful basil
  • 1 Tatashe
  • one scotch bonnet chilli or more depending on you
  • 2 beef cubes
  • 1 medium-size onion (use half first and the rest later as the recipe progresses)
  • 1 whole smoked fish

Instructions

  1. With a little water, blend the scotch bonnet chilli, tatashe, and first half onion.
  2. Plantains should be peeled, sliced into slices, and set aside.
  3. Heat the palm oil in a pan over medium heat for 3 minutes, then add the other half of the diced onion and fry for another 3 minutes.
  4. Then, into the hot oil, add the blended pepper and about half a cup of water, and bring to a boil for about 10 minutes.
  5. Cook for around 7 minutes with the diced plantain, salt, and seasoning before adding the smoked fish and cooking for another 3 minutes.
  6. Gently fold the fresh prawns into the plantain. Cook for an additional 3 minutes. Cook for another 4 minutes after adding the fresh vegetables. At this stage, combine everything and taste it for salt and seasoning, making any necessary adjustments.
  7. A few of the plantain can be mashed, but some chunks can be left for texture. Remove the pan from the heat and serve your plantain porridge right away.
