Warm up with turkey and yam pepper soup, pork stew delight

Pork stew

This mouthwatering dish combines tender pork with a fiery pepper sauce. I prefer frying the pork for this recipe as it enhances the flavors when mixed with the spicy sauce.
Prep time: 1 hour (including marination) Cook time: 1 hour 10 minutes Servings: 4 People

Ingredients
• 600g diced pork, preferably pork belly
• Four to five red bell peppers (Tatashe)
• Three scotch bonnet peppers (Ata rodo), or to taste
• Three onions
• Coconut oil or vegetable oil
• Two Knorr chicken cubes
• Salt to taste

Marinade
• One tablespoon curry powder
• One tablespoon pepper flakes or one teaspoon cayenne pepper
• Two Knorr chicken cubes
• One tablespoon minced garlic
• One tablespoon minced ginger
• One tablespoon rosemary
• One tablespoon dried thyme or ten sprigs fresh thyme
• One teaspoon onion salt
• Salt to taste

Method
• Clean the pork thoroughly, removing excess fat. Combine marinade ingredients and rub over pork. Marinate for at least one hour.
• Heat oil in a non-stick pan, sauté some chopped onions for two minutes, then add marinated pork. Fry for about 20 minutes until well-cooked and brown, stirring occasionally.
• Set cooked pork aside. Blend peppers and two onions to a rough consistency.
• In another pan, heat oil from fried pork. Sauté half chopped onion for 2-3 minutes, then add blended pepper mix, teaspoon curry powder, thyme, two Knorr chicken cubes, and salt to taste.
• Fry pepper mixture for 30-35 minutes on low-medium heat, stirring occasionally.
• Add fried pork to the stew, combine, and fry for another 15 minutes.
• Serve your Spicy Peppered Pork hot and enjoy!

Ingredients
• Eight to ten turkey pieces
• Chopped yam
• Three tablespoons pepper soup spice
• Two tablespoons crayfish powder (optional)
• Two tablespoons black pepper
• Scotch bonnet peppers, to taste
• One onion
• Grated ginger
• Two Knorr chicken seasoning cubes
• 1.5 litres water
• Salt to taste
• Scent leaves or basil leaves

Method
• Wash turkey pieces and place in a pot with salt, Knorr chicken seasoning, grated ginger, and chopped onions. Steam on low heat for five minutes.
• Add chopped yam and enough water to cover. Cook for 15 minutes.
• Add scotch bonnet peppers, ground pepper, crayfish, and black pepper. Adjust seasoning if needed.
• Cook until yam and turkey are soft.
• Add scent leaves or basil, simmer for two minutes.
• Serve hot and enjoy your Turkey and Yam Pepper Soup!
